RAMADAN FOOD DIARIES: KFC STYLE CHICKEN

I posted up this recipe last year and it was a favourite amongst my friends on Snapchat and Instagram following, this time I have altered the recipe slightly and given it an update, it is not a massive change to the recipe, but the addition of the buttermilk makes such a difference and I hope you all enjoy it!

INGREDIENTS

Chicken Marinade ingredients:

  • 2 lbs chicken breast fillets

  • ½ tsp pepper

  • ½ tsp salt

  • ½ tsp crushed red chillies

  • 1 tbsp Worchester sauce

  • ½ tsp mixed Italian herbs

  • 1 tsp paprika

  • Half a lemon

  • ½ Cup of Buttermilk

Flour mix ingredients:

  • ½ cup of plain flour

  • ½ cup of corn flour

  • 2 tbsp rice flour

  • 2 tbsp spice rub mix (I use the Texas fried mix)

  • 1 tsp baking powder

  • 1 cup golden breadcrumbs

  • 1 cup original Kellogg’s cornflakes (unsweetened)

Coating:

  • 2 eggs (Double the quantity of the eggs if you feel you need more coating for the amount)

  • 1/2 cup of milk

METHOD

  1. In a bowl mix together all the chicken marinade ingredients, add in your 2 lbs of chicken breast fillets and mix together. (You can refrigerate this for a few hours and take it out before cooking).

  2. In a separate bowl mix together all of the flour mix ingredients.

  3. In a smaller bowl mix together the eggs and about 1/2 cup of milk

  4. Take your marinated chicken breast and dip this into the egg mixture, then dip into the flour mixture. Double dip again into the egg mixture and with the final dip in the flour mixture.

  5. Then place into the deep fryer and cook until golden (about 4mins). Repeat these steps as you coat each piece of chicken breast meat

Tip: Cook the chicken breast fillets for about 3-4 mins and do not over cook it, as this will over dry the meat. You want to cook it long enough to form a golden crispy texture on the outside and tender chicken inside. Don't overbrown them either!

How to Serve

- First of all take one of the fried fillets and place a slice of cheese on this (I use cheddar cheese slices) and then sprinkle onto the cheese a few jalapenos and place into the grill until the cheese has melted.

- Then get a seeded brioche bun (I get mine from Waitrose, they do a lovely selection!), on the bottom bun I spread a little mayo, ketchup and the reds dirty burger sauce, I will layer on this a little iceburg lettuce, a thin slice of tomato, some red onions, sliced gherkins and then I place the chicken fillet with the melted cheese and jalapenos on top. Then additionally at this point you can add any grilled turkey bacon slices or burger sauces or mayo you want to add the then stick the bun on top. I grab a pickled gherkin and thread this through a bamboo chicken skewer and then put it into the burger to keep it upright ready for serving.
